A variation of the basic cabbage kimchi with sliced pumpkin added between the layers of cabbage leaves. This is a specialty of the Hwanghae-do region in North Korea and is popular as a base for kimchi stew.

재료
늙은 호박 1개, 배추1/2포기, 무청 50g, 실파 2/3단, 마늘 3통, 생강 1쪽, 생새우 1컵, 고춧가루, 액체 육젓, 소금, 통깨

조리법
1. 호박을 반으로 갈라서 씨를 파내고 껍질을 벗긴 후 1cm 두께로 도톰하게 썬다.
2. 썬 호박을 넓은 그릇에 담고 소금을 고루 뿌려 두었다가 숨이 죽으면 물에 헹구어 물기를 뺀다.
3. 배추와 무청도 절여 물기를 뺀 후 파와 같이 4cm 길이로 썰고 마늘, 생강은 곱게 다진다.생새우는 소금물에 흔들어 씻어 건진다.
4. 고춧가루를 되게 개어 다진 마늘 ·생강, 액체 육젓을 넣어 고추양념을 만든다.
5. 호박과 나머지 재료를 ④의 고추양념으로 빨갛게 버무린다.
6. 손질한 새우를⑤에 넣고 고루 버무려 소금으로 간을 맞춘후 통깨를 뿌려 항아리에 담는다.
