Symbolizing harmony, japchae, a variety of cooked vegetables stir-fried with cooked glass noodles, is one of the most common festive dishes served at parties or on special occasions. This dish consists of rice topped with japchae, and is served on a plate with seasoning.

什锦炒菜具有和睦融洽的吉祥寓意,是韩国人喜庆家宴上必不可少的食物。各种蔬菜和粉条的搭配使口感和味道恰到好处,将菜放在米饭上面,配上调味酱拌着吃即可。

採用各種蔬菜和肉、粉絲,加入醬油調料炒好什錦拌粉絲後放在米飯上面拌著吃。

和合という意味が込められたチャプチェは、韓国で祝宴の膳に必ずのぼる料理だ。多様な種類の野菜と春雨がよく調和している。ご飯の上にのせてヤンニョムジャン(たれ)を添えて混ぜて食べる。

Ingredients (serve 4)
4 cups cooked rice (2 lb, 920g), 4 oz (120g) pork, 1 tablespoon soy sauce, 1 tablespoon rice wine, 4 oz (120g) sweet potato noodle (after soaking 8 oz (240g)), 2 cloves garlic, ½ green bell pepper, ½ red bell pepper, 1 oz (30g) carrot, ½ onion (3⅓ oz, 100g), 1 large green onion (1 oz, 30g), 4 ear mushrooms, 1½ tablespoon starch water (1 tablespoon starch powder, 1 tablespoon water), vegetable oil, salt, sesame oil as needed, 1 tablespoon toasted sesame seeds

Seasoning for noodles 1 tablespoon soy sauce, ½ tablespoon sugar, 1 tablespoon sesame oil, 1 tablespoon rice wine, pinch of ground black pepper

Preparation
1. Prepare cooked rice.
2. Soak the sweet potato noodle in lukewarm water for 20 minutes.
3. Cut the pork into 2x⅛x⅛-inch (5×0.3×0.3-cm) strips. Marinade the pork strips with soy sauce and rice wine.
4. Cut the bell peppers into 2x⅛x⅛-inch (5×0.3×0.3-cm) strips.
5. Cut the onion into long thin slices.
6. Slice the green onion diagonally. Mince the garlic.
7. In a medium bowl, place the ear mushrooms and add boiling water enough to cover for 5 minutes. Shred the ear mushrooms.
8. In a small bowl, put starch powder and water to make starch water.

Cooking
1. Heat a skillet with a vegetable oil over high heat. Stir-fry the onion, green bell pepper, red bell pepper and ear mushroom in order.
2. Heat another skillet with a vegetable oil over high heat. Stir-fry the pork strips.
3. In a large saucepan, add 4 cups water and bring to boil over medium heat. Add the soaked sweet potato noodle and cook for 5 minutes. Drain well. In a skillet with a vegetable oil over high heat and stir-fry the sweet potato noodles and add seasoning for noodles. Cook for 5 minutes.
4. Add the starch water to thicken the consistency. Sprinkle with sesame oil and toasted sesame seeds.
5. Place a scoop of cooked rice in the individual serving plate and place the noodles next to the cooked rice.
