For this dish, peel, shred, and knead balloon flower root with coarse salt to get rid of its bitter taste and stir-fry with minced garlic and sesame seeds in an oiled pan. The sharp yet refreshing taste stimulates one’s appetite.

桔梗去皮后切成细条,撒上盐揉搓一会儿去掉涩味,平底锅烧热后倒入少许油,加入桔梗和蒜末、芝麻盐一起翻炒即可。凉拌桔梗的味道清淡中带着微微的苦涩,非常开胃。

桔梗剝掉皮,撕成細絲,然後用食鹽抓一抓,以去掉苦味。鍋裡倒點油,爆蒜蓉,放入桔梗絲和芝麻鹽炒熟。桔梗特有的苦味有助於開胃。
