A simmering pot of thinly sliced beef and vegetables cooked at the table. After the beef and vegetables have been consumed, fresh noodles are added to the remaining broth and it is brought to a boil again.

用鳀鱼熬出高汤,加入切成薄片的 牛肉和蔬菜熬煮一定时间,然后再加入生面 条继续熬煮至熟。边煮边吃,食材和高汤吃完 了可以继续添加。

麵條火鍋是將切成薄片的牛肉和蔬菜放入高湯裡煮,放入生麵後煮著吃的火鍋。

薄切りの牛肉、野菜、生麺にだし汁を加えて煮た鍋料理。

Ingredients (serve 4)
3⅓ oz (100g) beef, 10 oz (300g) thin dried wheat noodles, 7 oz (200g) Napa cabbage leaves, 1½ oz (45g) carrot, 2 oz (60g) oyster mushroom, 2 oz (60g) spinach, 1 oz (30g) green onion, 1 tablespoon soy sauce for soup, 2 tablespoons water

Broth kelp broth (1 sheet kelp 4×4-inch, 10×10-cm, 6 cups water, 1.5L), 1 tablespoon soy sauce, 1 tablespoon rice wine, salt as needed

Seasoning 2 tablespoons soy sauce for soup, 1 tablespoon minced green onion, ½ tablespoon minced garlic, ½ tablespoon gochut-garu (red chili pepper powder), ½ tablespoon sesame oil, salt as needed, pinch of ground black pepper

Preparation
1. In a large pot, pour 10 cups water. Soak the kelp in the water for 30 minutes. Bring to boil. When it boils, remove the kelp and season to taste with soy sauce, rice wine and salt.
2. In a stockpot, bring 16 cups of fresh water to a boil and add the noodles over medium heat. When the noodles are cooked, drain and rinse them under the cold water several times. Coil the noodles with your hands to form a bird’s nest shape and let them drain in a colander.
3. Cut the beef and carrot into 2x½x⅛-inch (5x1x0.3-cm) pieces.
4. Cut the cabbage into 1-inch (3-cm) long pieces.
5. Shred the oyster mushrooms into thick strips. Cut the green onion2-inch (5-cm) long pieces.
6. In a medium bowl, combine all the ingredients of seasoning liquid and mix well.

Cooking
1. In a shallow hot pot, arrange the beef, vegetables and noodles in clusters side by side in harmonious contrasting colors. Add the seasoning on the top of the ingredients and pour the hot broth over the arrangement. Heatthe hot pot over medium heat.
2. When the cabbage is cooked, lower the heat to low. Serve in a bowl while it is boiling.
