This dish is made by boiling and pressing a pig’s head. More chewy than pressed pork meat, the pressed pig’s head is sliced and served with seasoned and salted shrimp sauce.

猪头肉用清水煮熟,用重物按压去掉水分后切成肉片,与纯瘦肉的肉片相比,口感更加嫩滑。蘸虾酱吃味道十分鲜美。

首先將豬頭肉煮好,再用重物按壓做成肉片,食用時頗有嚼勁,散發出絕然不同於精肉片的風味。可蘸蝦醬食用。

豚の頭部の肉を茹でてから、平たく伸ばして薄切りにしたもの。一般のゆで薄切り肉とは全く違うもっちり感がある。アミの塩辛に入ったたれにつけて食べる。
