Dishes made with various wild vegetables collected from mountains and fields are referred to collectively as sukchae. Dried sukchae are soaked in water, squeezed to remove excess fluid, and mixed with a variety of seasonings. The vegetables typically used for sukchae include bracken and balloon flower roots, which are pan-fried, and spinach and crown daisy, which are parboiled.

将生长在深山和田野中的植物或蔬菜焯熟后凉拌的统称为素菜。具体有蕨菜、桔梗等油炒的素菜和菠菜、茼蒿等用水焯一遍后凉拌的素菜。

將生長在深山和田野中的蔬菜清燙後調味製成的小菜,稱為素菜。主要使用嫩蘿蔔、蕨菜、桔梗、菠菜等食材。
