For this dish, a cooked cow’s head is wrapped in a cotton cloth and pressed with a heavy weight. After being pressed and sliced, the cow’s head is served with salted shrimp to aid indigestion.

将煮至烂熟的牛头肉用棉布包好后,用重物按压,最后切成片,蘸调味酱食用即可。也可以蘸虾酱吃,有助于消化。

牛の頭部の肉をじっくりと茹で、布で巻いて重石をのせて伸ばしておいたものを切ってたれにつけて食べる。アミの塩辛と一緒に食べる場合もある。消化を助けるといわれる。
